Cassava Buko Bibingka or ang iba ang tawag ay Cassava cake naman. Ito ay ginagamitan ng ginadgad na cassava or kamoteng kahoy sa tagalog.

Cassava Buko Bibingka (Tinagalog)

Sangkap:

2 cups grated cassava
1 cup young coconut (buko) strips
2 eggs
1 cup sugar ( I use 3/4 cup only)
3/4 cup evaporated milk
1/4 cup condensed milk
1/2 cup coconut milk
1/4 cup butter, melted
grated cheese for topping
another 1/4 cup condensed milk (for topping na ihahalo sa reserved liquid)

*Banana leaves o dahon ng saging pangsapin sa baking dish (optional)

Paraan:

1) Pre-heat po natin ang oven ng 350º F.

2) Prepare na rin po nating ang baking dish or aluminum pan na gagamitin, maaari po ninyong lagyan ng dahon ng saging ang ilalim ng baking dish at pahiran ng butter or mantika or kung hindi naman gagamit ng dahon ng saging … pahiran na lang po ang baking pan ng extra butter.

3) Sa isang bowl, ipaghalo ang grated cassava, buko strips, eggs, sugar, eval, condensed milk, coconut milk at 1/4 melted butter. Haluing mabuti. Mag strain po ng isang cup ng liquid at i-set aside para po sa toppings mamaya.

4) Samantala, ilagay na ang mixture mula sa bowl sa baking dish. Bake po natin ng 30-35 minutes.

5) Habang hinihintay maluto ang cassava sa oven. Sa isang saucepan gamit ang mahinang apoy, ihalo po ang na-reserve na 1 cup liquid mixture at 1/4 cup condensed milk. Haluing mabuti hanggang lumapot.

6) Pagkaraan ng 30-35 minutes, pour po natin ang ginawang sauce at budburan ng grated cheese. Ibalik po sa oven ng mga 10-15 minutes hanggang magmelt at mag brown po ang cheese.
