(Spicy Mussels in Coconut Milk)
1 kilo mussels, (wash and clean thoroughly)
2 cups coconut milk/cream
2 red siling labuyo (bird’s eye chili pepper)
2 tbsp olive oil
1 tsp ginger, minced
2 tsp cilantro, minced
2 tsp lemon grass, minced
2 tsp garlic, minced
1 tsp sesame oil
Lime juice from 1 lime
Pinch of Magic sarap (optional)
salt and pepper
In pan heat oil, saute garlic, siling labuyo, ginger and lemongrass.
Add the mussels and add the coconut milk. Cook till all shells open.
Add sesame oil, lime juice, cilantro. Season with magic sarap, salt and pepper according to your taste. Simmer and constantly stir until coconut milk curdles and becomes creamy thick. Turn off heat.
Serve in bowls with rice on the side. Enjoy!
