Macaron Recipe with Salted Caramel Filling
Macaron recipe with salted caramel is my super fave dessert in the world! Crispy on the outside but soft and chewy in the inside.Just like Laduree Macarons they are just perfect.

MACARON RECIPE WITH SALTED CARAMEL FILLING

INGREDIENTS:

For Macaron shells:
1.76 cups (220 grams) of icing sugar /confectioners sugar
4 eggs whites (120 grams)
1.25 cups (120 grams) of almond powder
5.69 tablespoon (80 grams) of caster sugar

Salted caramel filling:
Condensed milk in a can boil it for 3-4 hours.
Add 6-8 tbsp of butter
4 tbsp of double cream
sea salt flakes

INSTRUCTIONS:

1. For Salted Caramel:
Mix it all together and its ready to go! If you don’t have time to make your own caramel, i would suggest to buy dulche de leche in shops -already boiled condensed milk and just add salt.

2. For the Macaron Shell: In a mixing bowl, sift the almond powder and icing sugar. Set aside.

3. Beat egg whites and sugar for long time until peaks start forming and then whisk a bit longer.

4. Combine the dry ingredients (almond & powdered sugar) with the beaten egg whites and fold with spatula gradually incorporating all of the ingredients. Gently folding and not over or under mixing the mixture. You are looking for a medium consistency and not runny, when you lift your spatula, the mixture should gently fall back into the bowl.

5. Transfer the mixture into a piping bag and use a baking tray with non stick baking paper.

6. Create small circles by piping small amounts of mixture onto the tray leaving space in between.

7. Place them in pre heated oven at 150 degrees for 12-15 min. You need to watch over it, baking time will vary per oven and on the size of your macaron shell.

8. Remove tray from oven and transfer into a wire rack to cool it first. Then using pallet knife take each of the macaron shells.

8. Start filling up your macaron, squeeze a filling onto each macaron shell and combine with the other to form a sandwich.

Serve and enjoy!

Cooking Notes: Some condensed milk may not turn into dulce de leche when boiled. So choose the best condensed, like Milkmaid, Alaska Condensed (Yellow label) etc.
