Mango Cupcakes

These Mango Cupcakes (steamed) are an ideal recipe for any first timer. You dont need an oven to make these delicious mango flavoured cupcakes. The recipe is just for small servings and so quick and easy to make. Happy cooking!

Mango Cupcakes (Steamed)

Yield: 6 Cupcakes

INGREDIENTS:

  • 1 cup all purpose flour
  • 2 eggs
  • ½ cup sugar
  • ⅔ cup fresh mango puree sweetened, (1 large mango pitted and sliced into cubes)
  • 3 tablespoon vegetable / corn oil
  • 1 teaspoon freshly squeezed lemon juice
  • ½ teaspoon lemon zest
  • 1 ¼  teaspoon baking powder
  • ⅛ teaspoon baking soda
  • Optional Toppings:
  • 1 mango, pitted and sliced into cubes for toppings
  • Whipped cream/Frosty Boy (*note below)


INSTRUCTIONS:

  1. For the dry ingredients:
    In a bowl, sift together the dry ingredients: flour, baking powder and baking soda. Set aside.
  2. For the wet ingredients:
  3. In another bowl, beat 2 eggs and gradually add sugar and continue beating for 1-2 minutes until sugar is melted and combined. Add in your mango puree, oil, lemon juice and lemon zest. Mix it until well combined.
  4. For the batter/mixture:
  5. Gradually fold in your dry ingredients with the wet mixture, in batches. Cut and fold technique. Just fold but do not stir. Do not over mix the mixture or else your cupcake will not rise and it will look flat and deflated.
  6. Prepare your molds or silicone cups lined with paper cups. Fill molds with batter up to ¾ full (I used a scoop or large spoon)
  7. You can use any ramekins or silicon cups to support the paper cups, so the cupcakes will not fall off when you steam it. However the cupcake liners are just optional if you intend to just serve it at home for a simple snack. It can work with just using any silicone cups or individual cupcake tins.
  8. Prepare steamer and let the water boil first.
  9. Arrange molds in a single layer on steamer rack and place over steamer. Cover with clean cloth on top to prevent water from dripping over your cupcakes. Then cover the pot with the lid.
  10. Steam for 15-20 minutes over low heat or until toothpick inserted comes out clean. Do not open the steamer until it reaches the required cooking time. It is important that there is enough steam heat for the rest of the cooking time.
  11. Removed the steamer rack from the pot and let it totally cool before frosting.
  12. Use a piping with a star tip and swirl a whipped cream on top and garnish it with fresh mango cubes. Enjoy!

*Notes

You can purchase instant whipped cream or powdered whipped cream in major groceries or local market in Metro Manila. It’s easy to use, just dissolved the powder into cold water and manually beat it or use an electric mixer chill for a few minutes and start frosting.

Some of the brands I know are Whipped It, Magic Whizk, JBU whipping cream powder and Frosty Whip. You can purchase it on Major Supermarket or Baking Supply Store Nationwide. The most affordable one you can buy is the Magic Whizk brand for 290 pesos at 1 kilogram.
