Melon sa Malamig, a very classic Filipino Fruit Juice, my favorite melon juice. Very refreshing in this hot weather!

Yield: 1 large pitcher
MELON SA MALAMIG (Cantaloupe Juice)
1/2 cup sugar
1/2 cup water, plus more for pitcher
1 medium cantaloupe
Large splash vanilla extract
1. In a regular saucepan, mix sugar and water over high to medium heat. Wait for the water to a boil, reduce heat to low. Keep on stirring until sugar is dissolved and slightly thick. Remove from heat and let it cool. Set aside.
2. Wash and clean the outside of the cantaloupe and slice in half. Remove the seeds and use a spoon. Use melon scraper, and scrape the flesh into threads of the cantaloupe. Transfer it into bowl. If a melon scraper is not available, slice the cantaloupe and grate the flesh using fork amd scoop it with spoon.
3. Place the grated cantaloupe flesh into the pitcher and add the cooled syrup. Fill with water. If using, add a splash of vanilla extract or some evaporated milk.
4. Serve chilled or with crushed ice. Enjoy!
