Indonesian Chicken Satay Recipe
INGREDIENTS:
- 1 kilogram chicken breast fillet, sliced 1 inch wide x 4-5 inches length
- 20 wooden skewers, soaked in water for 30 minutes
- On the Side: 1 cucumber, peeled and sliced
- green onions/cilantro, garnish
- Marinade:
- 2 tablespoons fish sauce
- 1.5 tablespoons minced garlic
- 2.5 teaspoons sweet soy sauce (Kecap Manis)
- 2.5 teaspoons sugar
- ¼ teaspoon white pepper
- ½ teaspoon turmeric powder
- ½ teaspoon ground coriander
- ¼ teaspoon ground cayenne pepper
- 2 teaspoons curry paste or powder
- ⅓ cup coconut milk
- Peanut Sauce:
- 1 cup dry roasted peanuts
- ⅓ cup water
- 2 cloves garlic (minced)
- ½ tsp dark soy sauce
- 2 tsp sesame oil
- 1 to 2 tbsp brown sugar
- 2 to 2 ½ tbsp fish sauce
- ½ tamarind paste (or 2 tbsp lime/calamansi juice)
- ½ tsp cayenne pepper
- ⅓ cup coconut milk
INSTRUCTIONS:
- Prepare Chicken breast and slice it across grain, about 1 inch wide each piece. Combine the marinade. Marinate the chicken for about 30 minutes in the refrigerator or longer.
- For the peanut sauce: Place all ingredients in a blender or food processor. Blend or process until sauce is smooth. Do a taste test, adding more fish sauce if not salty sauce (for vegetarians: enough or more cayenne substitute 2 ½ tbsp pepper if not spicy enough. too salty add a squeeze of lime juice.
- Prepare to grill the chicken: take it out from the fridge and start to skewer with the the wooden sticks. Grill the satay for 4 minutes on each side or until desired tenderness.
- Serve with Peanut Sauce and some sliced cucumber and garnish with chopped fresh green onions and cilantro upon serving.
