Creamy Peppered Shrimp Alfredo Recipe
12 ounces penne pasta
1/4 cup butter
2 tablespoons extra-virgin olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1/2 pound portobello mushrooms, diced (or any canned mushrooms)
1 pound medium shrimp, peeled and deveined
1 (15 ounce) jar Alfredo sauce
1 cup grated Romano cheese
1/2 cup cream (all purpose cream or any cream)
1 teaspoon cayenne pepper, or more to taste
Salt and pepper to taste
1/4 cup chopped parsley
For the pasta:
In a large pot, add enough water with pinch of salt. Bring water to a boil. Then, add pasta and let it cook for 8 to 10 minutes or until al dente; drain. Set it aside.
In a large pan, melt butter over low heat together with the olive oil. Add in onion, and cook until it becomes soft and translucent for about 2 minutes.
Sautee in garlic, red pepper, and mushroom; stir over medium-high heat until fragrant, about 2 minutes more.
Toss in the shrimp, and quickly cook until firm and pink about 1-2 minutes only. Pour in Alfredo sauce, Romano cheese, and cream. Let it simmer over low heat, constantly stirring until sauce becomes thick for about 3-5 minutes.
Season with cayenne, salt, and pepper to taste. Stir drained pasta into the sauce, and serve sprinkled with chopped parsley.
