Chicken Meatballs in Orange Marmalade

Yield: 24 meatballs


  • For the meatballs:
  • 1 ½ lbs. ground chicken
  • ¼ cup milk (fresh milk or evaporated milk)
  • ¼ cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger
  • 2 Tablespoons minced scallions (or onions)
  • 2 Tablespoons soy sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • For the sauce:
  • 1 ½ teaspoons sesame oil
  • 1 ½ teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh ginger
  • 1 ½ teaspoon crushed red pepper flakes, or more to taste
  • ¾ cup orange marmalade
  • ¼ cup hoisin sauce

Note: alternatively, you can deep fry chicken balls if oven is not available.


  1. For the meatballs: Preheat the oven to 260ºC. Grease mini-muffin pan or baking dish with butter. (oil or cooking spray)
  2. In a bowl, Pour in the milk and mix in the Panko breadcrumbs and let sit for 5 minutes.
  3. In a mixing bowl, mix together the ground chicken, garlic, ginger, scallions, soy sauce, salt, pepper and soaked breadcrumbs.
  4. You may use your hands to combine the meat mixture thoroughly. Using a spoon, scoop out about 2-3 tablespoon and shape it out into balls.
  5. Transfer each meatballs into the greased pan and bake for 12 to 15 minutes until the meatballs are fully cooked. You may start preparing for the sauce, while the meatballs are baking.
  6. For the sauce: In a saucepan, pour in sesame oil and olive oil over medium-low heat. Sauté garlic and ginger until fragrant for about 2 minutes.
  7. Toss in red pepper flakes, add orange marmalade and hoisin sauce. Let it cook and continue stirring, until the sauce becomes slightly thick for about 5 minutes.
  8. When the meatballs are cooked, remove the it from the oven and transfer it into a large bowl. Gradually pour the sauce on top and toss to even out sauce coating. Transfer it on a serving platter with slices of fresh fruits on the side. Enjoy!
