Estofadong Pata Ng Baboy (Stewed Pork Legs)

INGREDIENTS:

  • 1 kilo pork legs (pata ng baboy), chop in serving size
  • 1 onion, chopped
  • ½  garlic head, minced
  • 2 bay leaves (laurel)
  • 4 pcs sweet plantain bananas (saging na saba)
  • ½ teaspoon pepper corns (whole)
  • 6 pcs Banana Blossom (bulaklak ng saging)
  • 1 cup soy sauce
  • ½ cup vinegar
  • 1 tbsp brown sugar
  • 1 cup water
  • Cooking oil
  • Salt, to taste

INSTRUCTIONS:

  1. In a small pan, fry the bananas in a little oil until golden brown over medium heat. Turn off the flame and keep aside.
  2. In a saucepan, combine all ingredients except the fried bananas and banana flowers. Use medium heat.
  3. Once it boils, reduce the heat to low. Cover the saucepan and boil until the pork leg is soft for 45 minutes to an hour.
  4. Stir occasionally to prevent burning on the bottom. Add water if necessary. I added little by little so it wouldn’t dry out.
  5. When the meat is tender, mix in the fried banana saba and banana flower. Season with salt to make it tastier.
  6. Cooking Tips: Let stand for a few minutes before straining. You may strain unnecessary ingredients if preferred. Do not put too much banana blossoms so it won’t taste bitter.
  7. Serve and Enjoy!

Estofadong Pata Ng Baboy (Filipino Instructions)

  1. Sa isang maliit na kawali, iprito ang saging na saba sa kaunting mantika hangang maging golden brown sa katamtamang apoy. Patayin ang apoy at isantabi muna.
  2. Sa isang kaserola, pagsama-samahin ang lahat ng sangkap maliban sa pritong saging at bulaklak ng saging. Gumamit ng katamtamang apoy.
  3. Kapag kumulo na, hinaan ang apoy sa pinaka mahina. Takpan and kaserola at  pakuluan hanggang lumambot ang pata ng baboy sa loob ng 45 minutos hanggang isang oras. 
  4. Haluin paminsan-minsan upang hindi masunog sa ilalim. Dagdagan ng tubig kung kinakailangan. Nagdagdag ako ng paunti unti upang hindi matuyuan.
  5. Kapag malambot na ang karne, ihalo ang pinritong saging na saba at bulaklak ng saging. Timpalahan ng asin upang mas maging malasa. Hayaan ng ilang minuto bago hanguin.
