This Mac and Cheese recipe is super easy to make. Its creamy and cheesy. But make sure not to over cook it. Remember it will only take a few minutes to cook the sauce over low heat because it will thicken very fast. Happy cooking!
Mac and Cheese (Filipino Version)
1 kilogram macaroni pasta, cooked as per package instructions
1 bar 180g cheddar cheese, grated
5 Tbsp pimiento cheese spread
100g unsalted butter
2 cups fresh milk or evaporated milk
1/4 cup flour
fried bacon bits, optional garnish
Melt butter at low heat using a medium size sauce pan. Add flour, mix until well blended. Then add the evaporated milk stirring constantly until thick for about 2-3 minutes. Turn off heat.
Quickly add grated cheese and pimiento cheese spread and let residual heat melt tje cheese, stir and blend well. Pour on top of cooked pasta, garnish with fried bacon bits.
Serve and enjoy!
Cooking Notes: Adjust thickness of sauce with a drizzle of milk if necessary.
