PAKSIW NA PATA WITH SABA
- 1/2 kilogram Pork pata
- 1/4 cup white vinegar
- 1/4 cup soy sauce
- 1/4 cup Brown sugar
- 1 tablespoon Peppercorn
- 2 pc. Bay leaf (laurel)
- 1 bunch dried banana blossoms
- 2 cups Water
- 1 tablespoon Fish sauce or patis
- 4 pcs. Saba banana, cut into 2 and fried
Put all the ingredients in a pressure cooker and simmer over low heat for 30 minutes.
Add the fried saba bananas.
Continue cooking, uncovered, until the sauce has reduced to desired consistency.
Serve with fish sauce and steamed white rice.
