

What a great way to spruce up a traditional dish! This Chicken Spaghetti with Ro-tel (diced tomatoes and chillies in a can) is amazing! We of course love Velveeta and you can some cheddar cheese too as a topper. This easy recipe is so creamy and cheesy. It is so good!!
Ro-tel Chicken Spaghetti
INGREDIENTS
- 4 -6 chicken breasts, cooked & chopped
- 1 can cream of mushroom soup
- 1 can chicken broth
- 1-2 cans Ro-Tel tomatoes
- 1 lb Velveeta cheese, cubed
- 12 ounces spaghetti, cooked & drained
- 1 cup cheddar cheese, grated
INSTRUCTIONS:
- In a bowl mix together the soup, broth& Ro-tel tomatoes.
- In a 13×9 greased casserole dish layer as follows: Spaghetti, Chicken, Soup mix, Cheese.
- Bake in a preheated 350°F oven until heated through and cheese melts about 30-45 minutes.
- As soon as you remove from the oven stir to mix well, adding salt and pepper to taste. Top it with grated cheddar cheese and return to oven for a minute or two to melt on top.
- Serve and enjoy!
