Best BBQ Sauce Advice and Recipes:

“I’d love to share my personal BBQ sauce recipe with you, but a BBQ sauce is a signature thing for me. There are those who make their barbeque sauce from a base of fruit, whilst other people buy their sauce in bottles from the local supermarket. Most barbeque sauces are made from a tomato base, not necessarily fresh chopped tomatoes, but it can be from any form of tomato such as tomato ketchup, tomato paste or tomato juice. Other essential ingredients are sugar ; usually brown, which caramelizes the sauce onto the meat, creating a unique flavor, vinegar and Worcestershire sauce. If you want to experiment when preparing your homemade barbeque sauce, instead of sugar you could also use corn syrup, molasses or even honey.
A number of spices and seasonings are then added to create a barbeque sauce to suit the preferences and tastes of the chef and his guests. You may add chili powder, garlic, pepper, dried mustard, onion, soy sauce, Tabasco sauce and the list goes on. You can make barbeque sauce from just about anything! Your end result may also be a sweet and tangy sauce, a smoky grilled sauce or a hot and spicy sauce and the color may range from bright yellow to deep brown.
If you are going to prepare a barbeque sauce to glaze your meat with as it cooks under the grill or especially on the barbeque, as higher temperatures are reached, it is recommended that you make a sauce that is not tomato-based. This is due to the fact that tomato-based sauces burn the surface of the meat and therefore spoil the flavor of both the meat and the sauce.
For a barbeque glaze it is best  to prepare a mustard or vinegar-based sauce that will not burn during the cooking process. These types of sauces or glazes, as opposed to a fruit based sauce, can be applied to the meat during cooking time and the sauce will not burn. A fruit-based sauce however, must be added right at the end of the cooking time, so that the meat does not spoil.
To achieve a barbeque sauce that is rich, tasty and a wealth of exciting flavors, the sauce should be prepared in advance, to give the flavors time to blend together and create a distinctive taste.
Cooking time is also important, as the sauce should be allowed to simmer for as long as possible for the same reason. Although preparing the sauce may be a lengthy task, it is extremely simple and well worth it.
There are recipes for barbeque sauce that do not involve any cooking at all, which are useful if you need the sauce very quickly. The ingredients are simply blended together and the sauce is ready to serve.
You may use your sauce as you please, either to baste your meat, fish or poultry during cooking or by using it as a simple relish or condiment on the side of the plate or to top foods such as beef burgers, chicken wings or barbecued spare ribs.”
Below is a selection of recipes  for barbeque sauce, some using tomatoes, whilst others are a bit more daring.

Simple Barbeque Sauce

INGREDIENTS:

  • ½ cup of tomato ketchup
  • ⅓ cup of brown sugar
  • 1 tbsp of cider vinegar
  • 2 tsp of soy sauce
  • 2 tsp of Worcestershire sauce

INSTRUCTIONS:

  1. Combine all of the above ingredients together in a bowl and blend well.
  2. Some of the sauce can be added to ribs or chicken towards the end of cooking and the remainder can be used as a dip.

Hot Barbeque Sauce

INGREDIENTS:

  • 2 finely chopped onions
  • ½ cup of tomato ketchup
  • ½ cup of water
  • ¼ cup of bottled steak sauce
  • 6 tbsp of brown sugar
  • 6 tbsp of Worcestershire sauce
  • 2 tbsp of butter
  • 2 tbsp of cider vinegar
  • ⅛ tsp of hot pepper sauce

INSTRUCTIONS:

  1. Melt the butter in a saucepan over a medium heat.
  2. Add the chopped onions and cook gently for 5 minutes until softened.
  3. Then add all of the remaining ingredients and stir well.
  4. Bring the liquid to the boil, stirring continuously.
  5. Once the sauce reaches boiling point, reduce the heat and simmer for 20 minutes, stirring frequently.
  6. Transfer to a clean jar and store for 2 – 3 days before serving.

Chinese Style Barbeque Sauce

INGREDIENTS:

  • ½ cup of sherry
  • ⅔ cup of soy sauce
  • ⅔ cup of hoisin sauce
  • ½ cup of brown sugar
  • 4 cloves of crushed garlic
  • 2 tsp of black bean paste
  • 1½ tsp of Chinese 5-spice powder
  • 1 tsp of salt

INSTRUCTIONS:

  1. Place all of the ingredients into a saucepan and bring to the boil.
  2. Reduce the heat and simmer gently for 10 minutes or until the sauce thickens and reaches the desired consistency.
  3. Add to the meat at the end of cooking time or use as a dip.

Sweet Mustard Barbeque Sauce

INGREDIENTS:

  • ⅓ cup of Dijon mustard
  • ⅓ cup of honey
  • ¼ cup of vegetable oil
  • 2 tbsp of whole-grain mustard
  • black pepper

INSTRUCTION:

  1. Place all of the ingredients into a mixing bowl and stir thoroughly until fully blended. Use as a glaze during cooking on pork or poultry.

Spicy Tomato Barbeque Sauce

INGREDIENTS:

  • 8 oz (225 g) chopped tomatoes
  • ½ pint (300 ml) of passata
  • 4 fl oz (115 ml) of cider vinegar
  • 2½ oz (70 g) of brown sugar
  • 1 finely chopped onion
  • 2 tbsp of vegetable oil
  • 1 tbsp of Worcestershire sauce
  • 1 finely chopped garlic clove
  • 2 tsp of chili powder
  • 1 bay leaf
  • Several drops of liquid smoke flavouring
  • salt and pepper

INSTRUCTIONS:

  1. In a large saucepan, heat the vegetable oil  over a medium-high heat.
  2. Add the chopped onion and cook until softened.
  3. Then stir in the garlic, chopped tomatoes, passata, vinegar, brown sugar, Worcestershire sauce, chilli powder, bay leaf and liquid smoke.
  4. Bring the mixture to the boil, stirring constantly and then reduce the heat to a simmer.
  5. Cook the sauce for 15 – 20 minutes, stirring occasionally. Season with salt and pepper to your taste.
  6. Add to grilled or barbequed meat at the end of cooking or serve as an accompaniment to your meal.

Honey Spiced BBQ Sauce

INGREDIENTS:

  • 1 ¼ cup ketchup                            
  • 2 Tbsp Dry mustard
  • ⅔ cup Salad oil                           
  • 3 Teaspoon Ginger, fresh grated
  • ¾ cup Vinegar                             
  • 1 Lemon, sliced thinly
  • 5 Tbsp Worcestershire sauce                
  • 3 Tbsp Butter
  • 1 cup  Honey    

INSTRUCTIONS:

  1. Combine all ingredients in a saucepan and heat to blend together.

Hot Barbecue Sauce 2

INGREDIENTS:

  • 1 ½ cup Tomato juice                        
  • 1 Garlic clove,peeled
  • 1/3 cup Brown sugar                       
  • 1/4 cup Cider vinegar
  • 1 Onion slice, thick                   
  • 1 tsp Chili powder*
  • ¼ Green pepper, seeded                 
  • 1 Tbsp Prepared mustard
  • 1 Celery stalk

INSTRUCTIONS:

  1. Combine ingredients in a saucepan and let steam; keep just under simmering point for about 30 minutes. Remove and discard onion, green pepper, celery, and garlic.
  2. Brush sauce on meat or chicken during the last 15 minutes of cooking. If desired, spoon additional sauce over cooked meat when serving.

Hot Georgia BBQ Sauce

INGREDIENTS:

  • ½ cup Lemon juice                       
  • ⅓ cup Vinegar’
  • ¼ cup Ketchup                           
  • ¼ cup Water
  • 1 Tbsp Brown sugar                         
  • 1 tsp Salt
  • 1 tsp Dry mustard                         
  • 1 tsp Paprika
  • ½ tsp Pepper                            
  • ½ tsp Cayenne
  • ½ tsp Onion powder                      
  • ⅛ tsp Garlic powder
  • 1 tsp Tabasco sauce                       
  • 2 Tbsp Butter

INSTRUCTIONS:

  1. Combine all ingredients in a saucepan. Heat to boiling point.Use for BBQing chicken, pork, veal, beef or lamb.

Jack Daniel’s Rib Glaze

INGREDIENTS:

  • 1 cup Jack Daniel’s Whiskey               
  • 1 Tbsp Lemon juice
  • ½ cup  Dark brown sugar                    
  • 3 cloves, garlic, minced
  • 1 cup  Catsup                            
  • ½ tsp Dry mustard
  • 1 tsp Worcestershire sauce              
  • ¼ tsp Black pepper
  • ¼ cup  Vinegar                           
  • ¼ tsp Salt

INSTRUCTIONS:

  1. Combine all ingredients: Mix well. Brush ribs with a thin coating of glaze and place on grill.  Continue to baste when turning ribs. Makes enough for 2 racks of 7 to 10 ribs each. Also great on chicken wings.

Jack Daniels Regular BBQ Sauce

INSTRUCTIONS:

  • ½ large Onion, chopped                  
  • ½ tsp Pepper
  • 4 Cloves garlic, chopped          
  • ½ Tbsp Salt
  • 2 cup Ketchup                           
  • ¼ cup Tomato paste
  • ⅓ cup Vinegar                             
  • 2 tsp Liquid Barbecue Smoke
  • ¼ cup Worcestershire sauce              
  • ½ tsp Tabasco sauce, to taste
  • ½ cup  Brown sugar, packed           
  • Bourbon or whisky, to taste
  • 3/4 cup Molasses

INSTRUCTIONS:

  1. Combine onion, garlic and bourbon in a 3 qt saucepan.
  2. Saute until onion and garlic are translucent, about 10 min. Flame if possible.
  3. Add all remaining ingredients, bring to boil, then turn down mixture to a medium simmer.
  4. Simmer for 20 min.stirring constantly. Run through strainer if you want a smooth sauce. 

Makes 4 cups.

Layo Barbecue Sauce

INGREDIENTS:

  • ¾ quart Catsup                              
  • 4 Tbsp Lemon juice
  • 1 tsp English mustard                     
  • 1 Bay leaf
  • 1 tsp Freshly ground black pepper         
  • 4 Tbsp Sharp salad dressing
  • 1 Tbsp Worcestershire sauce               
  • ¾ cup Maple syrup
  • 1 Clove garlic                        
  • 1 cup Butter
  • ½ medium Onion                                    
  • Chili powder

INSTRUCTIONS:

  1. Mix, bring to a boil and simmer for one hour. Remove onion and bay leaf.

Jeff’s Barbecue Sauce

INGREDIENTS:

  • ¼ cup Bacon drippings or margarine        
  • 2 Tbsp Chili Powder
  • 1 cup  Ketchup                             
  • 1 tsp Dry mustard
  • ½ cup Molasses                          
  • ½ tsp Salt
  • 2 Tbsp Worcestershire Sauce              
  • ½ tsp Cayenne Pepper or Red Pepper
  • ¼ cup Wine vinegar                      
  • ½ tsp Garlic Powder
  • 2 cups Water                          

INSTRUCTIONS:

  1. In a saucepan, combine Bacon Drippings, Ketchup, Molasses, Worcestershire Sauce and Vinegar. Begin cooking over low heat. Slowly stir in the water.
  2. Add the remaining ingredients, mixing well.  Raise the temperature to medium high and bring the sauce to a boil. Reduce heat and simmer for 30 minutes.  
  3. Let sauce cool and stand at room temp. for an hour or more. When ready to serve, reheat.  Serve warm with barbecued meats. Sauce will keep refrigerated for several weeks.

Jim’s Teriyaki Marinade and BBQ Sauce

INGREDIENTS:

  • 1 cup Soy Sauce                         
  • ½ tsp Powdered Ginger
  • 1 cup Water                             
  • ½ tsp Garlic Powder
  • 2 Tbsp Vinegar                             
  • 1 tsp Hot Pepper Sauce, optional 
  • 2 Tbsp Brown Sugar                         
  • 2 Tbsp Cornstarch
  • 1 tsp Dry Mustard                    

INSTRUCTIONS:

  1. Whisk together all the ingredients except the corn starch. Marinade the meat long enough to flavor and tenderize – 1 hr for young chicken breasts or fish, overnight for round steak and up to 5 days for some game cuts.
  2. BBQ and baste with the marinade. Make a slurry of the starch and a little water and whisk into the marinade. Bring to a boil, stirring as the sauce thickens. Serve with the BBQ’d meat.
  3. Real garlic and ginger only improves this dish. The amount of pepper sauce can vary from mild to fiery. You can substitute wine, sherry, orange or pineapple juice for some or all of the water to vary the flavor.
  4. Pineapple juice has an enzyme that provides additional tenderizing power to the vinegar and mustard.
