This Palitaw recipe is an easy snack/merienda you can cook for the kids! With a delicious flavor of pandan. It smells so good and yummy. Happy cooking!
2 cups glutinous rice flour
1 cup water
1 tsp green pandan extract/or fresh pandan leaves
2 cups coconut, grated
1/2 cup sugar
1/4 cup sesame seeds, toasted and grounded
1 tsp green food coloring (Ferna or use gel type)
1. Prepare to boil a pot of water with a teaspoon of pandan extract or better yet use fresh pandan leaves.
2. In a mixing bowl, add rice flour. Set aside.
3. Dissolve food color first into 1 cup water and little by little add this green water into the rice flour, mix it well until you reach the desired consistency. Adjust the food color if needed. (but don’t put too much so it doesn’t affect taste).
4. Dust it with flour and continue kneading until it becomes dough look a like. It will be very sticky at first, you can use a spoon and keep on mixing and dust it with a little bit flour if needed.
Place it in freezer to chill for 3 minutes. And you can start to form it into shapes you like.
Take a portion of the soft dough and roll it into a ball between the palms of your hands.Pull lengthwise and shape into a tongue or round shape.
Drop into a boiling water. The dough is ready when it floats. Scoop it out with strainer and roll it in grated coconut, sugar and ground sesame seeds mixture.
Note: You can grind the sesame seeds using mortar and pestle.
Place it on a serving platter. Top with grated coconut. Enjoy!
