Marshmallow Icing

This Marshmallow Icing or some call it Marshmallow Fluff is simple and delicious, you may use it to top any cupcake, breads, loaf and rolls. Fluffy but not stable for decoration type icing. Just spoon it on top of any favorite cakes, add some candy sprinkles on top and your good to go! Kids will surely enjoy this sweet delicious icing.
For your convenience the instructions will be in English and Tagalog language or version.

Marshmallow Icing (Marshmallow Fluff)

INGREDIENTS:

2 egg whites (Medium Egg Size)
1-1/2 cups white sugar
1/3 cup cold water
1-1/2 teaspoons light corn syrup
1 teaspoon vanilla extract
1 cup miniature marshmallows

INSTRUCTIONS:

1. Combine egg whites, sugar, water and syrup in a stainless bowl or any heat proof bowl (for double boiler). Beat the mixture until fluffy.

2. Place your stainless bowl over a pot of rapidly boiling water. The water should not touch the bowl. 

2. Whisk until mixed well and slightly being heated. Whisk and beat in between heating for about 7 minutes. Until the icing forms a peak when beater is raised. Remove from heat.

3. Stir in marshmallows and vanilla. Beat until they melt. You will know you achieve the perfect peak, if your icing is forms a hard peak or covers the back of the spoon.

(Filipino Version) 

PARAAN NG PAGLULUTO:

1. Maghanda ng kaldero na may tubig, at pakuluan ito gamit ang katamtamang apoy. Ito ay iyong gagamitin bilang double boiler.

2. Kumuha ng heat proof bowl or stainless bowl. Paghaluin ang mga sumusunod: egg whites, asukal, cold water at light corn syrup. Gumamit ng beater. Kapag nahalo ng maigi ang mga sangkap at nagform na ito ng soft peak. Ipatong ang stainless bowl sa kaldero ng kumukulong tubig gamit ang katamtamang apoy. (Ito ang tinatawag na double boiler).

3. Paiinitan mo ang iyong sangkap sa double boiler, dahil dito ang init ay mas kontrolado upang maiwasan maluto ang puting itlog.

4. Haluin ng electric hand mixer ang mga sangkap habang ito ay pinaiinitan sa double boiler (maari mo itong tangalin sa double boiler ng minsanan at i-beat). Patuloy na haluin ito ng whisker sa loob ng 7 minuto sa ibabaw ng nakulong tubig. 

5. Patayin ang apoy. At saka ilagay ang mini marshmallow at vanilla flavor.

6. Haluin muli ng electric hand mixer hangang sa matunaw ang marshmallow. I-beat ito hangang sa maging malapot ang icing at kapag inangat mo ang hand mixer ay may namumuong peak sa dulo ng bakal or kutsara. 

7. Palamigin muna ang iyong marshmallow icing bago ito ilagay sa pipe at ifrost sa cupcakes or cake.
