How to cook Inutak Recipe or Sticky Rice Cake layered with Coconut cream and Purple yam flavors. Sumptuous native Filipino delicacy you must try! It is called Inutak because the toppings looks like a cooked brain. This recipe has two language version. English and Tagalog cooking instructions. So anyone can easily adapt this recipe.
Paano magluto ng Inutak ng mga taga Pateros, Taguig, Tipas, at Napindan. Honestly, it taste like sapin sapin. Masarap siya lalo at may kasamang sorbetes. Ala mode style!
Alam mo ba kung bakit inutak ang naging tawag sa kakanin na ito? Ito ay dahil sa coconut cream toppings na hawig sa itsura ng utak kapag hinurno sa pugon.
Maari din gumawa ng ibang flavor variance kapalit ng purple yam. Maari din po ang Chocolate, hmmmm mukang masarap! Pwede rin po ang cheese or corn at macapuno. Omg, ang sarap din nun.
Lagyan lamang ng kulay ang ilalim na layer para mas appetizing kainin kayo na po ang bahalang magdecide ng flavor na gusto para sa bottom layer. Ang recipe na ito ay hinango sa dalawang version. Tagalog and english language.

Inutak Recipe (Tagalog Version)

INGREDIENTS:
3 cups glutinous rice flour
6 cups coconut milk
11/4 cups sugar
Pinch of salt
1 tbsp vanilla
1/3 cup purple yam powder (or ube Jam*)
Purple food color

For toppings
1 can Coconut Cream

*Note: Mas masarap kung hahaluan ng ube jam compared sa ube powder.

PARAAN NG PAGLULUTO:
1. Sa isang bowl pagsamahin ang glutinous flour, sugar, salt, vanilla at coconut milk.

2. Hatiin sa dalawang sukat ang pinaghalong mixture, ang isang part lagyan ng yam powder o kung wala kayong yam powder patakan ng isang patak ng purple food color at ube flavoring upang maging kulay ube ang kulay at flavor nito.

3. Isalang sa isang kawali ang kulay purple na mixture isalang sa katamtamang apoy haluin upang ito ay hindi manikit, kapag malapot na ihango at itabi.

4. Sunod iluto naman ang isang parte nito na kulay puti, ganun din ang proseso ng pagluluto kaparis ng kulay purple.

5. Kapag naluto na isalin ang kulay purple sa isang pan na nilagyan ng butter then isunod ang kulay puti kapag nailagay ng pareho lagyan ng coconut cream sa ibabaw nito at i-bake o broil sa 260°C sa loob ng 15 to 20 minutes o hanggang sa maging brown lamang ang ibabaw nito.

Cooking Tips: Kung wala kayong oven pwede din itong iluto sa oven toaster para maluto ang ibabaw. Or pwede rin mag-improvise ng patungan sa ibabaw na metal sheet na may nagbabagang uling sa ibabaw, lagyan lamang ng handle sa ibabaw para hindi mapaso. At siguraduhin na natatakpan maigi ang lalagyan ng inutak para ma-toast ng tama ang toppings nito

Inutak Recipe (English Version)

INGREDIENTS:
3 Cups glutinous rice flour
1/3 Cups purple yam powder
6 Cups coconut milk
1 Cup sugar
1 Teaspoon Vanilla flavor
Natural food coloring
Salt

*Note: It taste even better with fresh ube ingredients or ube jam than using ube powder.

INSTRUCTIONS:
1. In a large bowl, mix together glutinous rice flour, sugar, coconut milk. Mix well until well combined then add vanilla and salt, divide into 2 portion.

2. Add the purple yam powder in one portion. Add purple food coloring, stir until yam powder dissolve.

3. Prepare llanera or round baking pan, brush with a bit of butter. Pour the purple yam mixture into a non stick pan. Turn the heat to medium and stir constantly until oily and smooth

4. Transfer the cooked mixture into in a pan, flatten by using an oiled metal spoon.

5. Cooked the 2nd portion (white color) until oily and smooth.

6. Put the white mixture on top of purple yam mixture to create two layers. Press and smoothen on top to flatten.

7. Pour coconut cream on top layer and broil at 260°C or 500°F until toppings are golden brown.

Cooking Tips:
If you don’t have an oven, you may improvise and use a metal sheet that can cover the pan and with live charcoals on top. Don’t forget to put a handle for easy removal of cover.
