Quick and Easy Palabok Recipe using Mama Sita’s Palabok instant mix. But if you want to cook the sauce from scratch, I also included a simple instructions at the end of this post for you to follow. Happy Cooking!! 

Quick and Easy Pancit Palabok

INGREDIENTS:

1 package palabok noodles, cooked as per directions on package
Sauce:
2 tbsp cooking oil
1/2 lb ground pork
2 Pack of Mama Sita’s Palabok Sauce
3 cups of water
1 tbsp fish sauce
1/2 tsp ground black pepper

Toppings:
1 1/2 cup tinapa flakes (smoked fish)
½ cup chicharon (pork crackling) pounded
4 hard boiled eggs,sliced
1 cup cooked shrimps (boiled or steamed)
1/2 cup green onion or scallions, finely chopped
3 tbsp fried garlic
2 pieces lemon, sliced (or 6 to 8 pieces calamansi)

INSTRUCTIONS:

1. Dissolve the palabok mix in water.
2. While doing this you can put the Oil in a Wok and Sautee the Garlic. When the garlic has a golden brown color you can add the Minced Pork.
3. Stir the complete mix in the dissolved palabok mix and bring it to a boil.
4. When it’s thick enough put the noodles in a serving plate and put the sauce over it. 5 Finish the dish with some shrimp on top of it, cracklings, some egg and you might try some smoked mackarel as well. Palabok is commonly served with calamansi.

Palabok Sauce can be made without mama sita’s mix.

PALABOK SAUCE (From Scratch)

INGREDIENTS:
¼ cup atsuete seeds also known as annat seeds
¾ cup water
Two cups shrimp juice
six or seven tablespoons flour
salt or patis and pepper

INSTRUCTIONS:
The way to prepare the palabok sauce is:
The Astuete seeds are mainly used to give a reddish/orange color to the sauce. It should be dissolved in about ¼ cup of water. After it’s dissolved it should be strained and add the remaining water with shrimp sauce into a pan. Add the flour to the mix and bring it to a cook. Finally stir until the sauce is thick and season with salt, pepper or patis to taste.
