When you’re in roadtrip to Lucban, Quezon, you might as well try their Pancit Habhab native delicacy and Longganisang Lucban. Traditionally they eat this on a banana leaves with barehands and no fork.

You can also try this at Buddy’s Pancit Lucban Restaurant in Eastwood or Timog.

What is Pancit Habhab?

The Unpolished Noodles or Pancit Lucban is Stir-fried noodle that is mixed with meat, pork liver, shrimp, and vegetables. It is a local famous food in Quezon (Southern part of the Philippines) especially during Pahiyas Festival in Lucban, Quezon. The odd way of eating this noodle is not using any cutlery. By eating food in an unpolished manner. It is served on a heated banana leaves and locals will traditionally eat this pancit using clean hands. They usually add or drizzle some vinegar to perk up the taste.

Here’s some of the original Miki Lucban brand you can try. Do note that these lucban noodles taste different from other local miki noodles. So if you really want an authentic Pancit lucban, you may look for Miki lucban brand.

PANCIT HABHAB RECIPE

INSTRUCTIONS:

  • 1 pack dried pancit habhab noodles
  • 200g pork, cut into small pieces
  • 250g shrimps, shelled
  • 2 large chayote, cut into bite-size pieces
  • 2 pechay or pak choi
  • 2 tbsp oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6-8 cups pork or beef stock
  • ½ cup soy sauce or according to your taste
  • pepper to taste
  • vinegar, drizzle upon serving
  • dahon ng saging

INSTRUCTIONS:

  1. Sauté half a portion of onion and garlic until it becomes translucent in a pan with heated oil.
  2. Add chayote and pechay , stir fry for about a minute.
  3. Add in ½ cup of pork or beef stock (pinaglagaang sabaw) and cook for another minute. Remove from wok and set aside.
  4. Using same pan, heat the rest of the oil and sauté the other half portion of onions and garlic until its cooked.
  5. Add pork and let fry until it becomes light browns. Add shrimp and stir fry for a few minutes and it turns pink, it turns to orange if its overcooked and rubbery.
  6. Add and pour in 6 cups of stock and soy sauce and wait for it to boil before adding pancit habhab noodles.
  7. Mix until noodles absorbs the stock and becomes soft.
  8. Add more stock if needed to adjust.
  9. Add the stir-fried vegetables,  sprinkle with pepper and salt to taste.
  10. Serve it in a plate of wilted banana leaves and drizzle some vinegar. Enjoy!
