Corned Beef Sisig
INGREDIENTS:
2 red onions roughly chopped
2 chilis, finely chopped
3 garlic cloves finely chopped
1 large can of corned beef* (cut into cubes) (Palm Corned Beef)
1 can Spam, cut into cubes
2 eggs
1 tablespoon soy sauce
2 tbsp mayonnaise
5 calamansi limes
3 thinly sliced Spring Onion (garnish)
Fried Shallots (optional garnish)
INSTRUCTIONS:
- Heat a pan and pour a little Olive oil. Sauté garlic, onions, chili until until cooked.
- Add in spam cubes and corned beef. Cook until the meat is turns brown and becomes a little flaky. Add in soy sauce. Stir until soy sauce is well incorporated with beef. Season with salt and pepper. Turn off heat. Let it cool a bit and stir in mayonnaise. (You don’t want your mayonnaise to turn into oil if it’s too hot)
- There are are two ways to serve it: If you have a sizzling platter, have that in the oven heating whilst you prepare the above. Serve the sisig sizzling with fresh eggs on top, stirring them in table-side with a squeeze or three of lime. If you don’t have a sizzling platter then simply crack the eggs into the pan with the beef you’re frying, stir it through and serve on a plate.
- Sprinkle the chopped spring onion and serve on the plate with the Calamansi on the side and Maggie savor for seasoning.
