Rinse chicken liver with clean water. Heat a frying pan over low heat then add 1 tbs of olive oil.
Sauté garlic and onion until slightly browned. Add pork and cook for a few minutes until it turns brown. Then add chicken liver, cook until the liver completely changes in color.
Once the pork and liver is cooked, add soy sauce, vinegar, water, pepper, sugar and bay leaves. Simmer till the water reduces. Add boiled eggs and red bell pepper.
Simmer for 2 minutes or until the sauce is reduced. Serve with hot steamed rice. Enjoy!
