Pork and Chicken Liver Adobo with Eggs
INGREDIENTS:
- 200g pork, chopped (kasim)
- 200g chicken liver
- 3-4 pcs boiled eggs
- 1 tbs olive oil/canola oil
- 6 cloves garlic, minced
- 1 medium onion, chopped
- 1 small red bell pepper, juliened
- 2 tbs soy sauce
- 1/4 cup water
- 1 tsp ground black pepper
- 1-1/2 tbs white vinegar
- 1 tsp salt
- 2 bay leaves
- 3-4 pcs hard boiled eggs, shells removed
INSTRUCTIONS:
- Rinse chicken liver with clean water. Heat a frying pan over low heat then add 1 tbs of olive oil.
- Sauté garlic and onion until slightly browned. Add pork and cook for a few minutes until it turns brown. Then add chicken liver, cook until the liver completely changes in color.
- Once the pork and liver is cooked, add soy sauce, vinegar, water, pepper, sugar and bay leaves. Simmer till the water reduces. Add boiled eggs and red bell pepper.
- Simmer for 2 minutes or until the sauce is reduced. Serve with hot steamed rice. Enjoy!
