Smashed Cheesy Potatoes

INGREDIENTS:

  • 2 to 2 1/4 pounds baby Yukon gold potatoes
  • 1/4 cup sour cream
  • 2 cups shredded Cheddar
  • 3 tablespoons chives, chopped or snipped
  • Salt and black pepper
  • Bacon bits

INSTRUCTIONS:

  1. Slice potatoes in half and place in a pot.
  2. Fill pot with water and let water boils.
  3. Once water starts boiling, carefully add the potatoes and season with 2 pinch of salt. Let it boil for about 10 minutes (until tender).
  4. Once potatoes are cooked, drain and return potatoes to the hot pot.
  5. Smash potatoes with masher and combine with sour cream and cheese.
  6. Once cheese is melting into potatoes, you can add chives, season with salt and pepper. Keep on smashing..until it becomes smooth in texture and lump free. (Using potato ricer tool gives more finer texture).
  7. Garnish with chopped bacons and chives if available. Best for side dish on roasted chicken. Serve and enjoy!
