Mac and Cheese Bacon Sandwich

Ingredients:
4 cups Mac and Cheese, (recipe below)
8 slices white bread, buttered
4 slices cheddar cheese
8 slices bacon, cooked and chopped

Mac and Cheese:
8 ounces elbow macaroni
Salt, pinch
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
3 cups milk
8 ounce processed cheese, (I use Velveeta)
1 1/2 cups shredded yellow Cheddar
Freshly ground black pepper

Instructions:

For the Mac and Cheese:

Boil the macaroni in a large pot of salted water to al dente and drain. (Follow package instructions)

in a saucepan, melt the butter using medium heat. Add in the flour and whisk it. Keep stirring for a few minutes, until there is no more lumps and flour taste is gone. Pour in the milk and stir, let it simmer over medium-low until sauce becomes thick for about 5 minutes. Add and mix in the processed cheese and Cheddar until melted. (Set aside a cup of extra sauce for sandwich) Then fold in your cooked macaroni. Sprinkle with salt and pepper

Transfer the Mac and Cheese in an 8-inch square pan or container and spread it out evenly. Put a cover using plastic wrap and refrigerate for 1 hour until it becomes firm. Slice the mac and cheese into 4 equal-size squares.

Assemble:
Prepare and heat a griddle using medium-low heat. Put each mac and cheese cut on a slice of bread, top with 1 slice cheese and a few chopped bacon and an extra mac and cheese sauce. Top itΒ with a second piece of bread and griddle the sandwich until golden and warm, about 2 minutes per side.

Repeat with the remaining slices of bread.
