A Western Visayas Region VI dessert delicacy made from toasted pinipig, coconut water and grated young coconut. A classic Iloilo delicacy, espasol in manila and Baye Baye in Visayan. Happy cooking! 

Baye-baye (Iloilo Delicacy)

INGREDIENTS:

  • 2 cups pinipig
  • 1 cup coconut water
  • 1/2 cup sugar
  • 1-1/2 cups butong (young coconut),grated

INSTRUCTIONS:

  1. Toast pinipig in a pan. Using a blender, grind toasted pinipig until fine in texture.
  2. In a bowl, combine ground pinipig, coconut water and sugar. Combine until well blended, then add grated butong.
  3. Divide into serving portions. Wrap each serving in prepared plastic wrappers or wax paper. Chill before serving.
  4. Serve and enjoy!
