
A Western Visayas Region VI dessert delicacy made from toasted pinipig, coconut water and grated young coconut. A classic Iloilo delicacy, espasol in manila and Baye Baye in Visayan. Happy cooking!
Baye-baye (Iloilo Delicacy)
INGREDIENTS:
- 2 cups pinipig
- 1 cup coconut water
- 1/2 cup sugar
- 1-1/2 cups butong (young coconut),grated
INSTRUCTIONS:
- Toast pinipig in a pan. Using a blender, grind toasted pinipig until fine in texture.
- In a bowl, combine ground pinipig, coconut water and sugar. Combine until well blended, then add grated butong.
- Divide into serving portions. Wrap each serving in prepared plastic wrappers or wax paper. Chill before serving.
- Serve and enjoy!
