2 fennel bulbs, trimmed and sliced
2 apples (Mutsu, McIntosh or Granny Smith), peeled and sliced
Juice of half a lemon
1 tablespoon honey mustard
2 tablespoons apple cider vinegar
1/3 cup Extra-Virgin Olive Oil
Salt & pepper to taste
6 dried pear halves, thinly sliced lengthwise
1/4 cup pistachios
3 ounces goat cheese, crumbled
1. Prepare dressing by putting all ingredients inside a tightly sealed glass jar and shaking vigorously to mix well.
2. Place the sliced fennel and apples in a bowl. Pour dressing and toss to coat.
3. Arrange them on a plate and garnish on top with the sliced dried pears, pistachio nuts and crumbled goat cheese.
