“Kale is gaining popularity as the choice of greens for your salad. It’s been sprouting in restaurant menus coast to coast.
Hailed as a Super Food. Here are the numbers: one cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of Vitamin A, 134% of Vitamin C, and a whopping 684% of Vitamin K. And it’s also a good source of minerals, potassium, iron, phospohorus and magnesium.
Include kale in your diet as a cancer preventative and to lower your cholesterol. Make a powerhouse kale salad that is bursting in nutrients and so delicious. It is earthy and somewhat bitter like arugula, so choose ingredients that will complement and lessen the strong taste of kale.”
