Kale is gaining popularity as the choice of greens for your salad. It’s been sprouting in restaurant menus coast to coast. Hailed as a Super Food. Here are the numbers: one cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of Vitamin A, 134% of Vitamin C, and a whopping 684% of Vitamin K. And it’s also a good source of minerals, potassium, iron, phosphorus and magnesium.

Include kale in your diet as a cancer preventative and to lower your cholesterol. Make a powerhouse kale salad that is bursting in nutrients and so delicious. It is earthy and somewhat bitter like arugula, so choose ingredients that will complement and lessen the strong taste of kale.

KALE & APPLE SALAD

INGREDIENTS:

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt
  • 1 bunch kale, ribs removed, leaves very thinly sliced
  • 1/4 cup dates
  • 1 honey crisp apple
  • 1/4 cup slivered almonds, toasted
  • 1 ounce pecorino, finely grated (1/4 cup)
  • Freshly ground black pepper

INSTRUCTIONS:

  1. In a bowl, combine lemon juice, olive oil and 1/4 teaspoon salt, whisk altogether.
  2. Toss in kale, until coated. Set aside for 10 minutes.
  3. While the kale sits, slice the dates into thin slivers and the apple into thin matchsticks.
  4. Toss in the dates, apples, almonds and cheese to the kale. Season with salt and pepper and toss well.
  5. Enjoy!
