Large Intestines of pork (bituka ng baboy)
Pork Ears (Tengang Baboy)
4 cloves Garlic, minced
1 Onion, minced
Ginger, (thumb sized) strips
Long green chili peppers, minced (siling haba)
Wash and mash the intestine with salt and banana leaf to get rid of the odor. Wash and clean intestine and ears thoroughly.
Boil intestine and ears with ginger until tender. Chop into squares.
In a pan, saute garlic and onion.
Toss in the intestines and ears, saute over medium to high heat until it becomes tender.
Adjust heat to low and add soy sauce, vinegar, and pepper.
Garnish with long green chili pepper.
Best pulutan recipe or finger food when drinking beer or liquor. (appetizer)
