Mocha Cupcakes


For the Cupcakes:

½ cup brewed coffee, at room temperature
1½ teaspoons espresso powder
½ cup whole milk
1 teaspoon vanilla extract
1⅓ cups all-purpose flour
⅓ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, at room temperature
½ cup  granulated sugar
½ cup light brown sugar
1 egg, at room temperature

For the Buttercream Frosting:

1 cup unsalted butter, at room temperature
2½ cups powdered sugar
1 teaspoons vanilla extract
1½ teaspoons espresso powder



For the Cupcakes:

Mix the espresso powder into the brewed coffee until completely dissolved. Pour milk and vanilla extract; set aside.

In a large mixing bowl, combine flour, cocoa powder, baking powder, baking soda and salt.

Using an electric hand mixer, beat butter, both sugars until light and fluffy set at medium speed for 3 minutes. Add in eggs and continue beating until just combined.

Adjust the speed of electric hand mixer to low, then gradually add flour mixture in three portions. Alternating with coffee mixture, continue beating until combined.

Line your cupcake pans with paper cups. Fill each cups with batter about two-thirds full.

Bake at preheated oven of 350 degrees F for 17 to 20 minutes. To check if it’s cooked, insert toothpick in center and it should come out clean.

Remember to let it cool first before frosting the cupcakes.


For the Frosting:
In a regular bowl, mix the espresso powder into the vanilla until dissolved; set aside.

Using an electric hand mixer and a large mixing bowl, cream the butter on medium speed for 5 minutes.

Adjust speed to low, and gradually add the powdered sugar portion by portion. Make sure it’s well incorporated before adding the next portion.

Adjust speed to medium-high and continue beating until fluffy, 1 to 2 minutes more. Pour the espresso and vanilla mixture and continue to beat until well incorporated.

Fill up your piping bag with a Round Tip and start frosting your (room temperature) cupcakes.
