BLT Waffle Sandwich
3 slices thick bacon
1 slices monterey jack cheese
2 slices waffle bread, toasted
1 tablespoon mayonnaise
2 slices Tomatoes
2 leaves lettuce
1 teaspoon unsalted butter
1 large egg
In a pan heat an oil, fry the bacon over medium heat until it becomes slightly crisp, around 8 minutes. Transfer to a plate lined with paper towels to drain excess oil.
Set the Monterey Jack slices on 1 piece of toasted waffle. Spread the mayonnaise on the other slice of waffle, top it with bacon, tomato and lettuce.
In a small pan, melt the butter. Crack the egg in a small bowl and whisk with fork and season with pinch of salt. Fry over medium heat. Cook and flip it over until cooked through.
Slide the egg on top of the lettuce; close the sandwich with another slice of toasted waffle.
Serve and enjoy!
