BLT Waffle Sandwich
INGREDIENTS:
3 slices thick bacon
1 slice Monterey Jack Cheese (Monterey Jack, is a Californian white, semi-hard cheese made using cow’s milk. It is noted for its mild flavor and slight sweetness)
2 slices waffle bread, toasted
1 tablespoon mayonnaise
2 slices Tomatoes
2 leaves lettuce
1 teaspoon unsalted butter
1 large egg
INSTRUCTIONS:
- In a pan heat an oil, fry the bacon over medium heat until it becomes slightly crisp, around 8 minutes. Transfer to a plate lined with paper towels to drain excess oil.
- Set the Monterey Jack slices on 1 piece of toasted waffle. Spread the mayonnaise on the other slice of waffle, top it with bacon, tomato and lettuce.
- In a small pan, melt the butter. Crack the egg in a small bowl and whisk with fork and season with pinch of salt. Fry over medium heat. Cook and flip it over until cooked through.
- Slide the egg on top of the lettuce; close the sandwich with another slice of toasted waffle.
- Serve and enjoy!
