Cheesy Pepperoni Omelette

3 medium eggs
1 medium potato, peeled
1 medium onion, minced
1 medium Tomato, coarsely diced
11 slices of pepperoni, fried
¼ cup cheese, grated (cheddar or mozarella)
pinch of ground black pepper

In a bowl, whisk eggs. Then add grated potato, onion and diced tomatoes. Whisk to combine well.

In a pan, heat an oil over medium to low heat and pour egg mixture. Quickly layer pepperoni slices over the top and sprinkle with grated cheese. Season with ground black pepper.

Cook around 15-20 minutes with lowest heat possible until egg has set on the top and cheese has melted. No need to turn it over.

Serve hot and enjoy! ?
