Always remember that when cooking beef chunks, the tenderness of your beef is the essence of any beef recipe. Although it is best to cook in a pressure cooker.
On a normal pot, it ussually takes 1 and half hour to tenderize. Isn’t it more satistfying when the beef almost melts when chewed?
I cooked it in regular pot over low heat for 1 hour and 45 minutes..the meat is absolutely tender by this time. Happy cooking!

Beef Afritada Recipe
INGREDIENTS:
1 kilogram beef chunks, (cubed)
2 tbsp cooking oil
5 cloves garlic, minced
1 medium onion, chopped
2 packs tomato sauce (250g/pack)
½ cup green peas
4 medium potatoes, peeled and quartered
2 medium carrots, peeled and sliced
1 medium red bell pepper, sliced
2 laurel leaves
1 cup water (+ 3 cups increments)
2 tbsp fish sauce
1 tbsp soy sauce
salt and pepper to taste
INSTRUCTIONS:
Heat wok and pour cooking oil over medium heat. Saute onions and garlic until fragrant.
Add beef chunks and cook until light brown, about 5-10 minutes. Season with fish sauce, soy sauce. pepper and salt to taste.
Pour tomato sauce and add 1 cup water and bring to a boil. Then just let it simmer over low heat for about 1 hour and 20 minutes.
Cover your pot and give it a stir occasionally to prevent scorching at the bottom. Let it cook until beef becomes tender. Simmer over lowest heat and adjust 3 cups water every 10 minutes in increments until beef is already tender.
Add the carrots, potatoes, bell pepper, green peas and the remaining tomato sauce.
Cook until vegetables are tender, about 10 minutes more.
