Always remember that when cooking beef chunks, the tenderness of your beef is the essence of any beef recipe. Although it is best to cook in a pressure cooker. On a normal pot, it ussually takes 1 and half hour to tenderize. Isn’t it more satistfying when the beef almost melts when chewed? I cooked it in regular pot over low heat for 1 hour and 45 minutes..the meat is absolutely tender by this time. Happy cooking!
Beef Afritada Recipe
1 kg beef chunks, (cubed)
2 tbsp cooking oil
5 cloves garlic, minced
1 medium onion, chopped
2 cups tomato sauce
½ cup green peas
4 medium potatoes, peeled and quartered
2 medium carrots, peeled and sliced
1 medium red bell pepper, sliced
2 laurel leaves
1 cup water
2 tbsp fish sauce
1 tbsp soy sauce
salt and pepper to taste
Heat wok and pour cooking oil over medium heat. Saute onions and garlic until fragrant.
Add beef chunks and cook until light brown, about 5-10 minutes. Season with fish sauce, soy sauce. pepper and salt to taste.
Pour tomato sauce and add 1 cup water and bring to a boil. Then just let it simmer over low heat for about 1 hour.
Cover your pot and give it a stir occasionally to prevent scorching at the bottom.
Add the carrots, potatoes, bell pepper, green peas and the remaining tomato sauce.
Cook until vegetables are tender, about 20 minutes more. Continue to simmer (lowest heat) and adjust little water if needed until sauce thickens and beef is already tender.
