Chicken Potato Salad

Your cravings will be satisfied with this yummy chicken with potatoes salad!


4 large potatoes,peeled and sliced into cubes
1 large carrot, grated
1 medium white onion, minced
2 tbs sweet pickle relish,
1/2 cup grated cheese
1 medium chicken breast
1 ½ cups mayonnaise
1 ½ cups pineapple tidbits
1/4 cup condensed milk, optional
salt and pepper to taste

Cook and boil potatoes, carrots in pot for about 10-15 minutes or until tender. Drain water from potatoes and carrots. Then set aside cool.

In the same pot, boil the chicken breast in water with pepper and salt. Let it cool, then shred chicken into small pieces.

Prepare pineapple tidbits or chunks and drain liquid. Set aside.

In a large bowl, add all prepared ingredients. Season with salt and pepper. And carefully toss them together to incorporate all the flavors.

Cover with cling wrap and refrigerate for 2 hours or more to chill.

Serve on a bed of fresh lettuce. Enjoy!
