Tuna Flakes Lumpia (Spring Rolls Recipe)
1 big can tuna flakes in veg.oil or spring water (drain the oil/liquid)
1 small carrot, grated
1 onion, minced
2 stalks celery, minced
salt and pepper
Lumpia wrapper/ sliced in half
Dab of water, for sealing lumpia wrapper
oil for frying
For the Filling:
Drain oil from tuna and transfer in a bowl. Add minced onion, carrots and celery. Season with salt and pepper to taste. Mix well until all ingredients are well incorporated. Set aside.
In a plate, spread the lumpia wrapper and scoop 1 tablespoon of tuna filling in the center of 1 wrapper. Gently, roll in to enclose the filling and fold both sides and seal the edge with a dab of water. Keep wrapping until all tuna fillings are wrapped up.
For Deep Frying:
In a large wok, heat oil over medium fire (oil should be enough for deep frying) and deep fry batches of lumpia until golden brown.
Once cook, drain oil and transfer to a plate lined with paper towels. Serve hot and crunchy with your favorite dipping sauce.
