This Tofu vegetable patties are affordable, made of veggies but not so obvious that its made of vegetables! Yup, your picky eater kids won’t know its made of veggies. Atleast for the first two bites they wont.
TOFU VEGETABLE PATTIES RECIPE (Tokwa)
INGREDIENTS:
2-3 medium tofu (tokwa), cubed
1 medium carrot, grated
1 large potato, grated
1 onion, minced
1 bunch of spring onions, chopped
1 thumb ginger, grated
1 tsp cumin powder
1 tsp coriander
2 tsp dried parsley
Salt and pepper
1/2 cup panko bread Crumbs
Cooking oil
INSTRUCTIONS:
In a large bowl, mix all ingredients until well combined. Shape it it into a ball using your hands the flatten it like a patty into your palm. Freeze it for 5 mins to firm quickly.
Heat some oil in a non stick pan and fry until golden brown on both side. Transfer into a plate line with paper towels.
Prepare your bread buns, lettuce, slices of tomatoes, cucumber, onion rings, and favorite salad dressing or mayonnaise.
Serve and enjoy!
