Grilled Liempo Recipe

Simple and delicious recipe of Inihaw na Liempo or Grilled Pork Belly using sprite. Classic are simply the best, tried and tested recipe of everyone. Happy grilling!

Ingredients:
1 kilogram liempo (pork belly)
1 head garlic, crushed (10pcs cloves)
1/2 cup Sprite
1/2 cup vinegar
2 tablespoons sugar
Freshly ground black pepper

Vinegar-Soy Dip
1 medium onion, finely diced
250 ml (1 cup vinegar)
125 ml ( 1/2 cup) soy sauce
Freshly ground pepper
1 sliced finger chili, (optional)

Instructions:

Prepare and cut liempo in lengthwise.

In a mixing bowl, add garlic, Sprite, vinegar, sugar and pepper, then add in liempo (pork belly). Cover with cling wrap or lid and let it marinate for about 3 to 4 hours in refrigerator.

Once ready for grilling, drain the pork and set aside marinade for basting pork. Prepare the grill to medium heat and start grilling pork until thoroughly cooked. Grill for 15 to 20 minutes on the first side and 10 minutes additional on the other side. Be sure not to burn the pork. Keep on basting with the left over marinate to moisten the meat.

For the Vinegar-Soy Dip:

In a bowl, mix onion, vinegar, soy sauce and pepper. Mix it well to blend. Add some sliced chilis to make it spicy and hot. Adjust according to preference.
