Squash Shanghai (Kalabasa Spring Rolls)

Ingredients:

1/4 Squash (diagonaly cut into small pieces)
1 medium onions, diced
1 cup fish fillet, (bangus, tinapa or any fish)
Lumpia wrapper
Salt and Pepper to taste
Oil for deep frying

Instructions:

In a pan, heat an oil and sautè onions, squash and fish fillet over medium to low heat. Season with salt and pepper to taste

Once cook, immediately turn off heat, drain from oil and transfer to a bowl. Let it cool and set it aside.

Meanwhile prepare your lumpia wrapper and a small amount of water for dabbing and sealing lumpia.

Once the filling has cooled up, you can start wrapping each lumpia wrapper with the filling in the center.

Once done with wrapping, prepare a shallow pot and pour enough oil for deep frying.

Serve it crispy and hot. Enjoy!
