No Bake Mango Jelly Cake

Ingredients:
. 2 cups (250 g) sweet biscuit crumbs
. 125 g butter, melted
. 100 g packet white marshmallows
. 1 tsp gelatine
. 1/4 cup milk
. 1/4 tsp mango essence
. 2/3 cup thickened cream
. 250 g mangoes cubes
. 2 x 100 g packets mango jelly
. 2 cups boiling water
. A pinch of yellow colour

Mama’s Guide Instructions:

Grease a 19cm x 29cm lamington pan.
Combine biscuits and butter in pan.

Press evenly over base of prepared pan ; refrigerate until firm.

Combine marshmallows, gelatine and milk in sauce pan, stir over low heat, without boiling, until marshmallows are melted. Add a pinch of yellow colour. Transfer to large bowl, add essence; Cool to room temperature.

Whip cream until soft peaks form, fold into marshmallow mixture, pour over biscuit base.

Place mangoes over marshmallow. You can decorate different fruits to give colour combination, like cherry, red berry, strawberry and refrigerate mixture 50 minutes.

Dissolve jelly in boiling water; pour jelly over mangoes , refrigerate until firm before cutting.
