Don’t throw away the Sapal ng niyog or in english coconut pulp. The pulp is nutritious and can be re-invented into a burger patty. It’s full of healthy fiber and good for our body too. 

What is Sapal ng Niyog – Sapal ng niyog is shredded coconut meat. The coconut milk is extracted from the coconut meat. In Philippines, our old ways to extract coconut milk is through grated or shredded coconut meat. Filipinos will have it grated (ipapakayod) in the market, and manually squeezed the coconut meat by hand with a little warm water to get fresh coconut milk from the pulp. Normally, the 1st and 2nd extract is used for cooking.

Sapal ng Niyog Burger (Coconut pulp)

INGREDIENTS:
1/2 cup sapal ng niyog (or dessicated coconut, alternatively)
1 egg
2 tablespoons soy sauce
1/2 teaspoon black pepper
1 teaspoon kinchay, minced
1/4 teaspoon refined salt
2 tablespoons onions, minced
2 teaspoon garlic, minced
1/4 cup flour
2 tbsp oil for frying


INSTRUCTIONS:
1. In a large bowl, combine coconut sapal, garlic, black pepper, chopped onion and salt. Mix thoroughly.
2. Then add soy sauce, chopped kinchay and egg. Mix it again until all ingredients are well incorporated.
3. Add flour to the mixture. (little by little)
4. Freeze for 5 minutes to firm. This can be easily formed into patties once frozen quickly for 5 minutes.
5. Deep fry in a shallow pot with enough oil.
6. Drain off excess oil and transfer into paper lined plate.
7. Serve with burger buns with catsup and vegetable garnish if preferred.


Coconut Sapal Balls
Ingredients:
2 cups sapal
3/4 cup flour
2 eggs
1/4 cup chopped carrots and red pepper
1 teaspoon salt

Instructions:
1. Combine all  ingredients.
2. Form into balls.
3. Fry.
