Fermented carrots are high in probiotics. According to experts, it is very good to our guts specialy for the kids. Most of us must learn how important probiotics rich food can contribute to our health overall. Studies have shown that probiotics is essential to our gut health which proves to be beneficial to many problems such as depression, anxiety, food allergies, constipation, bloating and diarrhea among others. The probiotics are good bacteria that lines the wall of our gut for better nutrients absorption. Pickled carrots are one of the probiotic source you can make to add to your daily meal. It’s healthy to our body! Good for the family.
Pickled Carrots
INGREDIENTS:
3 large carrots, julienned or thinly sliced
1/2 cup water
1/2 cup cane vinegar
2-3 tablespoon sugar, according to your taste
1 teaspoon salt
1 tablespoon thinly sliced ginger
3 cloves garlic, sliced
1 medium white onion, sliced
1 small red bell pepper
1/4 cup raisins, optional
Alternative ingredients: Bay leaves, cayenne pepper (siling labuyo), jalapeño, peppercorn, favorite fresh herbs
INSTRUCTIONS:
In a saucepan, combine cane vinegar, water, sugar, salt. Let the mixture come to a boil.
Turn off heat and let it cool slightly.
Arrange the carrots, ginger, onion, bell pepper, and garlic in sterilized jar. Pour in the vinegar solution up to the ream to prevent air.
Seal the jar as tightly as you can and refrigerate the sealed bottles. Let it marinate inside the refrigerator overnight or longer before serving. Enjoy!
