If you haven’t tried this Taiwanese Adobo (3 cup chicken), you’ll definitely love this famous and classic dish from Taiwan which they call 3 Cup chicken. They call it 3 cup chicken because it is mainly composed of 1 cup soy sauce, 1 cup rice wine and 1 cup sesame oil.

Taiwanese Adobo (3 Cups Chicken) taste sweet, yet savory with a little bit of spicy taste from chilis. The smell of basil leaves with aromatic sesame oil will make you more even hungry! Get ready with lots of rice.

TAIWANESE ADOBO RECIPE (3 Cup Chicken)

INGREDIENTS:

  • (A):
  • 1 kilogram Chicken (cut into desired size)
  • 10 cloves garlic, crushed
  • 6 thinly sliced ginger, (about ½ thumb size)
  • 1-2 tablespoon sugar
  • 2 pieces red chili pepper (or dried chili flakes or labuyo)
  • 1 cup basil leaves* (thai or sweet basil)
  • (B):
  • ⅓ cup Soy Sauce
  • ⅓ cup cooking rice wine* (shao hsing hua tiao chew)
  • ⅓ cup Sesame Oil
  • ½ teaspoon Salt
  • 1 tablespoon Dark Soy Sauce*

Notes:
*Cooking rice wine, dark soy sauce and basil leaves are available in major groceries like SM supermarkets

INSTRUCTIONS:

  1. Heat up a pan with 2 tablespoon sesame oil, add in ginger, garlic and cook until fragrant.
  2. Add in chicken, sautè until both side of the chicken turns golden brown. Pour in the (B) ingredients and stir well until it boils. Let it simmer and adjust heat to low. Let it cook for additional 15 minutes.
  3. Constantly stir sauce, and simmer until sauce becomes thicker and slightly reduced. Add in the chopped chilis and basil leaves. Stir well and place back the cover and cook for 1 minute more. Only half cook basil leaves.
  4. Turn off heat. Serve hot and enjoy!
