Creamy, healthy and delicious Squash soup for the family. You may partner this soup to any roasted meat or steak.
To level up this soup, you can add a pinch of nutmeg to add flavor.
Serve it with some drop of cream (if available) for presentation and garnish it with fresh herbs like basil or parsley.

Squash Soup Recipe
½ Squash, peeled and chopped
1 large Potato, peeled and chopped
1 medium onion, minced
3 cloves garlic, minced
3 tablespoon Butter
1.5 cups fresh milk (or 370 ml evaporated milk or coconut milk)
½ cup water
1 teaspoon sugar
salt and pepper
In a pan, add butter and sautè garlic until lightly brown. Add in onions and continue to sauté until it becomes soft and fragrant.
Add the chopped squash and potato into the pan. Let it simmer and cover pan until it becomes tender. Once tender, remove from heat and let it cool for 5 minutes.
Once cooled, transfer the sautéed squash and potatoes into the blender pitcher. Puree it until smooth and creamy and no bits and lumps left.
Return the puree mixture back in the pan and let it simmer. Adjust consistency with little water if needed but not too much. (about ½ cup). Bring it to a boil over medium-low heat. Add milk and let it continue to simmer for 2-3 minutes. Season it with sugar, salt and pepper to taste. Transfer into serving bowl with toasted buttered bread on the side. Enjoy!
