You gotta try these Melting Moments…its a simple cookie recipe that melts in your mouth..yummy!
Be creative, you can use a pipe and swirl it to your favorite shape. Or use assorted shape cookie cutters and make a heart hole in the center with strawberry jam filling in the center.
These melting moment cookies though are the classic design. You use a fork to mark the cookies in the center. Store it in air tight containers for longer shelf life without the filling or you can also freeze it. Take it out and let it thaw on the same day you want to serve it.
So what makes the Melting Moment cookies melt in your mouth? It’s actually the icing sugar ingredients that makes it melt in your mouth.
MELTING MOMENTS COOKIES
125 gram butter, softened
1/3 cup icing sugar
1 tsp vanilla extract
3/4 cup of flour
1/4 cup of corn flour
Jam & buttercream for filling
Preheat the oven to 180 degrees.
In a large bowl add butter, vanilla and cream it by gradually adding sugar, beat until it becomes smooth & creamy.
In another bowl, mix together flour & corn flour. Then add it to the butter mixture. Mix it well until it forms into fluffy dough.
Dust hands with flour, scoop a tablespoon of mixture, roll into balls & place onto a lined tray. Using fork dipped in an icing sugar slightly squash each biscuit on top to mark each cookie dough.
Baked for 12-16 minutes. In between baking, watch out and place a foil if needed to prevent over toasting the top.
Remove biscuit from the oven, let it cool completely before you add the filling.
Spreadwith buttercream onto one half of the cooled biscuits , spread jam on the other half , then put the buttercream biscuit above the jam biscuit. Serve and enjoy!
FOR THE BUTTERCREAM
350g icing sugar
3 tbsp boiling water
½ tsp vanilla essence
Place the butter in a mixing bowl and beat until soft.
Add the rest of the ingredients.
Beat until smooth and creamy.
