Ube Jelly Pearl Ice Cream

This Ube Jelly Pearl recipe is so creamy with Jelly Cubes inside and topped with gooey black pearls, tapioca pearls or sago! Its a perfect combo to try.

From now on your ice cream doesn’t have to be too expensive because this ice cream is budget friendly and easy to do. This ice cream is way better than the ready-made. Once you learn how to make your own ice cream. You will surely stop buying those in the groceries with lots of preservatives and probably unwanted chemicals.

You may also use Frosty Boy or Whip It powder for this recipe. Just Follow the package instruction first on how to make whipping cream, then continue with this recipe.

Cooking Note:
Use of electric hand mixer is recommended to make it so smooth and it will double in volume. You may also use a blender if hand mixer is not available. You may have to do this in batches since the blenders capacity normally can only handle a limited volume.

If ube powder is not available, you can substitute with ube flavoring and ube food coloring.

Where to buy black pearls or tapioca pearls in Philippines? You can buy it in baking store near your place. Or you can simply buy sago in all SM groceries. If you still dont know a baking store near your place, buy it in online stores like Lazada or Shopee. You may also Google a nearest baking store in your area.

UBE JELLY PEARLS RECIPE

Yield: 1 Gallon

INGREDIENTS:
(A) Ice Cream
2 packs Nestle All-Purpose Cream (250 ml/pack), chilled
1 can Condensed milk (250 ml), chilled
1 cup/8 oz icy cold liquid milk (i used bear brand sakto pack dissolved in water)
1 tbsp ube jam
2 tsp ube food coloring (ferna)
2 tbsp ube powder or ½ tsp ube flavoring
pinch of salt

(B) Gelatine Cubes
1 pack Mr. Gulaman Unflavored White Gelatin (25 grams)
850ml water
⅓ cup ube powder
¾ cup Sugar

(D) Layering
Ube Jam
2 cups Black Pearls/Sago

INSTRUCTIONS:
(A)
In a mixing bowl, use a hand mixer and beat bear brand milk + 8 oz water. Add 1 tbsp ube jam, 2 packs all purpose cream, condensed milk, 2 tbsp ube powder and ½ tsp ube flavoring.

As you add each ingredients, keep beating in between until mixtures become so thick and well incorporated. You will start seeing foamy texture with small-medium bubbles on the side. It will take about 10 minutes in beating until mixture doubles up. Transfer into freezer and let it freeze for 2 hours.

In a saucepan, mix and dissolve Mr Gulaman powder in 850 ml of cold water.

Over medium heat, place saucepan with dissolved gulaman mixture in stove. Add and whisk ube powder and let it boil for about 3 minutes. (Do not leave pan unattended to avoid overflow). Adjust heat to low as soon as it boils. Add in sugar and stir to dissolve. Turn off and remove from heat.

Transfer gelatine immediately in a rectangular container to spread about ½  inch thick. Let it stand to cool for 30 minutes. When the gelatin sets, cut into cubes. Ideal would be ½ x ½ inch in size or smaller. Set aside.

(C)

Take out the ice cream mixture and beat it again for about 2-3 minutes. Add and fold in ube gelatine cubes.

Transfer back in freezer and cover it tightly and let it chill completely for additional 3 hours or more. (Use air tight containers to prevent ice cream from forming ice crystals.

(D) Layering

Layer each glass with a few tablespoon of ube jam at the bottom, ube ice cream mixture and black pearls on top. Serve and enjoy!
