Ensaladang Talong
INGREDIENTS:
8 Eggplant, grilled
6 medium Tomatoes, cubed
2 medium Red Onions, sliced thinly
2 Long Chili Peppers (Siling pang-sigang), seeded and sliced diagonally
1 – 2 tablespoons Shrimp Paste
2 tablespoons Vinegar
1/4 teaspoon Ground Black Pepper
INSTRUCTIONS:
1. Grill the eggplant to cook and soften, then peel off the charred skin. Wash in running water. Drain water completely.
2. slice the eggplant and cut into bite sizes.
3. Transfer the eggplant in a serving bowl, add all the other ingredients. You may add more shrimp paste, if desired.
4. Refrigerate until ready to serve, or serve as it is, with rice and fried fish or pork.
