
This recipe is adapted from Kittencal’s Scalloped Potatoes and Ground Beef Casserole, and since this is an American version, I twitched some of the ingredients to conform to Filipino style and taste buds. This recipe is also inspired from the scalloped potato and beef casserole we ate at Myron’s Cafe at Ascott Hotel. It came out so perfect and delicious!
SCALLOPED POTATO AND BEEF CASSEROLE
(FILIPINO STYLE)
INGREDIENTS:
1 kilogram ground beef, lean
1 medium onion, chopped
1 small red bell pepper, seeded and chopped
4 garlic cloves, minced
1⁄2 teaspoon dried chili pepper flakes (optional)
1 teaspoon salt (or to taste)
1⁄2 teaspoon fresh ground black pepper
5 russet potatoes (peeled and sliced thinly)
4 tbsp raisins
1 tbsp rice wine (optional)
SAUCE:
1 ¼ cups + 4.5 tsp (2 cans) condensed cream of chicken soup
1 small onion, chopped (about 1/3 cup)
3⁄4 all purpose cream
1⁄2 cup Nestle sour cream
1⁄2 bar grated quick melt cheese (any cheese or mozzarella or parmesan)
1 teaspoon garlic powder
1⁄2 teaspoon salt
fresh ground black pepper (to taste)
1 tsp dried basil leaves
pinch of sugar
INSTRUCTIONS:
Cook the Ground beef:
In a large pan, saute onion and garlic until soft and fragrant. Add in bell pepper, raisins and dried chili flakes. Let it cook for a minute. Toss in ground beef after and stir fry for a few minutes until brownish. Drain fat using a strainer or colander to remove excess oil.
Return to pan and saute in minced garlic, season with rice wine, salt and black pepper. Let it cook and give it a stir until cooked through. Turn off heat and set aside.
Prepare the sauce:
In a mixing bowl, combine the cream of chicken soup with minced onion, nestle cream, sour cream, grated cheese, garlic powder, seasoned salt and black pepper. Stir it well to combine.
Assembly:
In a greased 13 x 9-inch baking pan (I lined with foil), cover the whole base of the pan with sliced potatoes (reserve half of the potatoes for the final layer).
For the 2nd layer, spoon half of the sauce mixture to cover the top of potatoes. (reserve half of the sauce for the top layer)
Third layer, sprinkle with grated cheese. (you can use any processed cheese or mozzarella or parmesan depending on your budget.
Fourth Layer, add all the ground beef mixture on top.
Fifth layer, add in scallop potatoes on top to cover the beef filling.Press it down a little bit with large spoon to compressed it together.
Sixth layer, Add in remaining sauce mixture and press it down the beef. Sprinkle dried basil leaves on top.
Transfer the pan into a tray, just in case there’s any spills. Cover pan with foil and bake over 170°C for 1 hour.
After an hour, remove foil on top of the pan and continue to bake for additional 20 minutes. Remove pan from oven and sprinkle grated cheese and return at the top part of the oven to broil for about 5 minutes to melt the grated cheese on top.Turn off oven and let it cool.
