IGADO is an authentic Ilocano dish made from pork tenderloin and pork offal or innards cooked in a vinegar-soy sauce mixture. You can find it in every turo turo in the Philippines because everyone loves it too. Though it is high in uric acid, moderation is advised when eating this menu. Pork Igado Recipe

INGREDIENTS:

  • 1 kilogram pork tenderloin, sliced into 2 inch strips
  • ½ lb pig’s liver
  • ½ lb pig’s kidney
  • 1 cup green peas (optional)
  • 1 medium-sized carrot, cut into strips (optional)
  • 3 cloves garlic, minced
  • 1 medium-sized onion, diced
  • 2 siling haba, chopped (long green chili peppers)
  • 1 red bell pepper, julienned
  • 3 pieces dried dahon ng laurel (bay leaves)
  • 6 tablespoons soy sauce
  • 5 tablespoons vinegar
  • 1¼ cup water
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

INSTRUCTIONS:

  1. In a pot, heat oil over medium to low heat and sauté garlic and onions. Add the pork tenderloin and continue cooking until the color of the outer part turns light brown.
  2. Add the soy sauce and water and continue simmer until the pork is very tender. Add the pig’s kidney, dahon ng laurel, salt, and pepper and simmer for 10 minutes more.
  3. Then, add the pig’s liver, vinegar and continue to cook for another 10 minutes.
  4. Add the veggies like red bell pepper, carrots, green peas and siling haba and cook for 3-5 minutes.
  5. Mix it well and let the liquid evaporate until the sauce becomes thick.
  6. Transfer to a serving plate and serve while hot. Share and Enjoy!
