Japanese Shoyu Ramen Style

This is a simple style of a Japanese Shoyu Ramen and inspired from the original. Because most of us may not have an easy access to Japanese ingredients. This recipe is simplified to what most Filipinos can afford or what is commonly available in our groceries. You may find some of these ingredients available in major supermarkets (along the isle of International Section).

Japanese Shoyu Ramen Style (Tagalog version)


INGREDIENTS:

  • 170 grams ramen noodles
  • Soup base:
  • 3 cups pork broth/ tubig (or use broth cubes)
  • 3 tbsp soy sauce o kikoman
  • 2 tsp butter
  • 1 tsp brown sugar
  • 1 clove garlic, tinadtad
  • 1 onion, tinadtad
  • 1 tsp luya, tinadtad
  • chili powder
  • 1 tbsp sesame oil, garnish
  • Toppings:
  • 1/2 kilo kasim ng baboy, hiniwa ng maninipis (pork shoulder)
  • 1-2 nilagang itlog (malauhog)
  • ¼ tasa seaweeds
  • ½ tasa repolyo
  • 1 tasa togue
  • onion leeks
  • nori wrapper
  • fish cake, sliced thinly (optional)


INSTRUCTIONS:

  1. Ilubog sa mainit na tubig ang ramen noodles hanggang sa maluto at maghiwa-hiwalay ito. Tanggalin sa tubig. At ilagay sa mga serving bowl.
  2. Ihanda naman ang soup base. Mag-gisa ng bawang, sibuyas at luya sa butter. Timplahan ng toyo o kikoman at brown sugar, ilagay ang broth or tubig. Lagyan mg sesame oil at patayin ang apoy.
  3. Ihanda ang toppings: Hiwain ng manipis ang laman ng baboy at pakuluan sa toyo na may asukal. Isantabi muna.
  4. Hiwain ng manipis ang repolyo at onion leeks. Isantabi muna.
  5. Sa isang bowl, ibabad sa tubig ang seaweeds sa loob ng 10-15 minutes. Alisin ang tubig at idagdag sa soup bago ihain.
  6. Sa isang bowl, ilagay ang noodles at soup base. Lagyan ng toppings at i-serve habang mainit ang sabaw. Enjoy!
