
This Sweet Chili Garlic Squid is a quick and easy seafood menu. Sweet, spicy and garlicky. Just make sure you don’t over cook your squid though or it will turn rubbery in texture. Remember cooking time for squid doesn’t take more than 45 seconds over high heat.
SWEET CHILI GARLIC SQUID
INGREDIENTS:
½ kilogram squid, cleaned
6 cloves garlic, minced
1-2 piece red chili pepper, (siling labuyo) minced
3 tbsp soy sauce
2 tbsp brown sugar
3 tbsp tomato ketchup
3 tbsp cooking oil
INSTRUCTIONS:
Wash and clean squid, remove the head, ink bag, the insides, backbone and the outer skin of the squid. Wash and drain squid in a strainer and let water drip for a few minutes. This is needed because squid contains lots of water. Draining it longer will reduce water production while cooking it. Slice each squid into 3-4 ring pieces. Set aside.
In a pan, heat oil and sauté in garlic until fragrant for about two minutes. Constantly toss it to prevent the garlic from being burnt.
Then, add in the sugar, soy sauce and ketchup. Stir and cook mixture for 5 minutes until the sauce becomes thick over low heat. Add in chopped chili peppers or labuyo and stir it well.
Add in squid and let cook for about a 45 seconds over high heat. Do not over cook squid or it will turn rubbery in texture.
Once the squid is tender adjust heat to low, season with salt and pepper. Stir it well until the sauce is well combined with the squid. Turn off heat immediately and serve hot.
