Its healthy, fresh, vegetable and fruit salad in one. With raw green leafy vegetables, potatoes, carrots and some fruits to make it juicier. You will surely love this mixed vegetable and fruit salad combo!
VEGETABLE AND FRUIT SALAD
INGREDIENTS:
2 medium potatoes, boiled
1 cup green peas, boiled
1 cup Pineapple chunks, drain from syrup
1 cup Mayonnaise (I used Kew Pie)
½ cup all purpose cream
2 carrots, peeled, boiled, sliced
½ cup raw Iceberg Lettuce, (wash, pat dry and sliced)
½ cup Cabbage, boiled or raw
1 ½ tbsp sugar
¼ tsp White Pepper
½ Apple, sliced in small Cubes
Pinch Of Salt
INSTRUCTIONS:
In a large mixing bowl, add mayonnaise, all purpose cream, sugar, salt and pepper. Stir it well until well combined. Keep in the fridge to let it cool.
In a small pot, pour in water and boil peeled potatoes and carrots until tender. Prick with a fork to check tenderness. Drain from water and let it cool. Sliced in equal sizes and set aside.
If using raw peas, bring a small pot of water to a hard boil. Meanwhile, shell the peas into a colander and rinse it after. Boil the peas for about 60 seconds. Its done once the peas rise to the top. Drain from water thoroughly and set aside to cool.
For the apples, peel it and core the center, slice it into cubes.
For the cabbage, blanch in hot water until half cooked. Drain from water and pat dry with paper towels and chop. Prepare lettuce, pat it dry and chop. Set aside.
Take out the prepared mayonnaise from the fridge and add all the prepared fruit and vegetables. Toss it well.
