In fact you can trim down this recipe with as little as 3 ingredients to save more money.

TORTANG SAYOTE (Chayote Omelette)
1-2 sayote, peeled and sliced into small cubes (so it cooks quickly)
1 onion, minced
1/2 cup flour (harina)
3 cloves garlic, minced
3-4 eggs, beaten
2 tbsp spring onions, chopped or any fresh or dried herbs (kinchay, basil or cilantro)
1 chicken broth cube
pinch of pepper powder
In a bowl, beat eggs, add sayote, onions, garlic, spring onions, flour, crushed broth cube and pepper to taste. Mix it well until well combined. Set aside.
In a medium pan, heat oil over medium-low heat until hot.
Prepare a small saucer (or platito) scoop enough amount of sayote mixture. Gently and slowly push down the mixture from the saucer to the hot oil to fry. Fry in both side over low heat. Do not overcook eggs.
Once done, drain from oil and transfer into a serving platter. Prepare banana ketchup sauce on the side. Serve and enjoy!
