FRESH FRUIT CAKE

This fresh fruit cake is so easy to make, ideal for Birthdays, Baptismal, or any special occassion. The whipping cream frosting is so delicious and stable specially in summer. In the Philippines you can look for Frosty Boy or Whip It (whipping cream powder).

Whipping cream powder are easy to whip, just dilute the powder in icy cold water or milk and use an electric hand mixer. Just follow the package instructions for the water ratio.

Where to buy these whipping cream powder in Philippines, local market, any baking store, supermarket (very quick to go out of stock), Lazada and Shopee.

FRESH FRUIT CAKE

INGREDIENTS:

225g Butter  (1 cup or 8 oz.)
400g Caster sugar  (2 cups)
4 Eggs
310g Self raising flour  (2 ½ cups)
250ml Milk
1 tbsp Vanilla extract

For decoration:
Whipped cream (Powder whipped cream also available in baking supply stores and some groceries)
1 can mixed fruit
Fresh strawberry
Fresh kiwi
Black grapes
1 can pineapples
1 can peaches

Alternative if there’s no self raising flour:

Just add 2 ½ teaspoons of baking powder, ¼ tsp salt to 2 ½ cup plain flour. Sift the flour, baking powder and salt together and mix it well.

INSTRUCTIONS:

1. Preheat oven to 180/gas 4. Grease & flour three 20cm tins

2. In a medium bowl cream together the butter & sugar. Beat in the eggs one at a time. Combine the milk & vanilla, add alternately to the creamed mixture with the flour, ending with the flour. Mix only as much as necessary. Pour into the prepared tins.

3. Bake for 20 mins in the preheated oven or until the top of the cake springs back when lightly pressed. Cool in the line over a wire rack.

For Cake Decoration:
Peel and sliced almonds. Set aside.

Moist both cakes with milk then beat whip cream and apply whipped cream on one cake then add mixed fruit  on top of the first cake. Place 2nd cake on top of the first cake.

Cover the whole cake with whipped cream and decorate with fruits as you like. Apply almonds on sides. Serve and enjoy!
